Taco Chili. A Love Story in One Pot.

Let’s be honest: dinner time can feel like a hostile situation. You’re tired, everyone’s hungry, and the fridge is nearly empty. That’s where my One Pot Taco Chili comes in.

This is the kind of recipe that doesn’t just feed you, it hugs you from the inside. Cozy, comforting, and ready to save dinner with minimal effort.

And did I mention it’s mostly made from cans?
Just open, dump, stir, and simmer.

Don’t let the simplicity fool you. This chili is flavorful, warm-you-up-from-the-inside delicious, and somehow makes you feel like a responsible adult who totally has their life together. It’s hearty without being heavy and healthy without trying too hard. Tomatos, lean ground turkey, onion, corn, and beans galore.

Humble. Unassuming. Affordable. Criminally underrated. I love them. They’re having a comeback moment and I, for one, am fully on board the bean train. If you’re still side-eyeing them… allow me to gently remind you: beans are good for you. Fiber, protein, and a little digestive krumping. Also, they’re musical. Yes please.

Now back to the chili…No real prep. No sink full of dishes. Just one glorious pot of low-fat, high-fiber, protein-packed chili that checks all the comfort food boxes without blowing your nutrition goals.

Around here, we make it on repeat. It’s earned a spot in our recipe rotation hall of fame. (Yes, that’s a thing now. I just declared it.) I try to make a soup once a week, and this one keeps making the cut because it’s easy and so budget-friendly.

Well, fine, after all of that, I’m not going to keep it from you…here it is:

Taco Chili

prep time: 10 min
cook time: 30-45 min
serves: 6

ingredients:
1/2 Onion– Diced
1 lb. Ground Turkey or ground beef
1 can Black Beans
1 can Tri-Bean Blend
1 can Diced Tomatos
1 can Corn
1 can Diced Green Chilis
1 pkg Taco Seasoning
1 tsp Dan-O’s Taco Blend-optional
1 pkg Ranch Seasoning
or sprinkle in what your heart feels

optional toppings:
Cheese
Sour Cream
Tortilla Chips—crushed.
Avocado
Cilantro
Cooked Rice

directions:

in a stock pot, sauté over medium/ high heat the ground turkey along with the diced onions until turkey is no longer pink. About 10 minutes.

one at a time, add in full cans including the liquid of beans, diced tomatos, corn, and green chilis.

mix in one package of taco seasoning and ranch seasoning. Add Dan-o’s Taco seasoning if you have it for added flavor.

stir it all together and let it simmer on medium/low for 30-45 minutes or until you can’t wait any longer. The longer you let it simmer the better it tastes just like all chilis in my opinion.

top with your favorite shredded cheese and sour cream and anything else you may like.

bonus: crunch up some tortilla chips and add to your soup (kind of like crackers) it makes it even more delicious.
 
 
if you need to make one more meal out of it, serve it on top of rice. makes a great taco rice bowl.
